ChopHouse & Brewery was introduced by Rock Bottom Breweries in Denver, Colorado in 1995. At the time, the company was publicly traded, but in 1999, founder Frank Day and a private management group took the company private again after buying out the shareholders. Rock Bottom was jointly acquired with Gordon Biersch in 2010 by Centerbridge Capital Partners, who named the new group CraftWorks Restaurants and Breweries. However, in 2020 CraftWorks went bankrupt, and was purchased by private equity group SPB Hospitality. In 2024, SPB sold the brand along with several other of its restaurant brands to Kelly Companies in San Diego, California.
