Chimay is a well-known brand of Trappist beers and cheeses. It was created in 1862 by the Trappist monks of the Abbaye Notre-Dame de Scourmont, located in Chimay, Belgium. The brewery was established to support the monastery’s financial needs and sustain its charitable activities. As a brewery recognized by the International Trappist Association, the beer is required to be brewed within the immediate surroundings of the abbey, it must be brewed under the supervision of monks and/or nuns, and the profits should be intended for the needs of the monastic community.
