O’Fallon Brewery was founded in St. Louis, Missouri in 2000 by Tony Caradonna and his wife Fran. The two had previously started the local craft beer distributorship in St. Louis, Signature Beer, in 1990 before starting their own brewery.

The brewery thrived initially, and by 2010 it was producing about 6,500 barrels a year. But by 2011, the company was facing financial troubles, and the Caradonnas sold the business to former Anheuser-Busch InBev executive Jim Gorczyca. Gorczyca had been looking for a brewery with a reputation for quality and high growth potential, and quickly secured distribution contracts with several wholesalers. In 2015, the company opened a brand new facility at a cost of over $10 million. Gorczyca was not able to turn the business around, however, and in 2023 the company went bankrupt, with the company looking for potential owners to purchase the company at the time of writing.
