Ayinger Brauerei was founded in 1878 in Aying, Germany by Johann Liebhard. Liebhard inherited his father’s agricultural and forestry business, which included a tavern. He decided to build a brewery for the tavern, which took advantage of recent advances in refrigeration to brew lager beer all year long. In 1904, Liebhard handed the brewery off to his daughter Maria Liebhard and her husband August Zehntmair. When Zehntmair died unexpectedly in 1936, the brewery fell to their daughter Maria Krescence Zehntmair and son-in-law, Franz Inselkammer. When Inselkammer died in 1986, his son Franz Inselkammer Jr took over ownership of the brewery. His son, Franz Inselkammer III, has acted as owner and brewer since 2010.
