11 Below Brewing was founded in Houston, Texas in 2015 by Bryce Baker, Jeff Handojo, Brandon Moss. The three friends had started as homebrewers before going professional, and hired Keenan Zarling to build out the brewery and act as head brewer. Zarling left the company in 2020.

Baker and Moss had previously worked together in the oil industry at Schlumberger Limited, homebrewing on the weekends as a shared hobby. The brewery was originally known as Pump Jack Brewing, named after the piece of oil field equipment that siphons petroleum out of the earth. However, they received a cease and desist letter from the Plump Jack Winery in Oakville, California, so the team abandoned the name. Since a standard barrel of oil equates to 42 gallons, and a standard barrel of beer equates to 31 gallons, the team chose the name “11 Below” as a connection to their previous careers.

In 2024, the company announced that it was being purchased by Fortress Brewing and B-52 Brewing, which had previously merged in 2022 under the holding company Coastal Citadel. 11 Below subsequently moved their taproom from the Houston location to the former Fortress location in Spring, Texas, and moved production of its beers to the B-52 Brewing location in Conroe, Texas. All three beers are now brewed in that location, and although the taproom in Spring has been rebranded to 11 Below, all three beer brands are served together on site.
