Celis Brewery was founded in Austin, Texas in 1992 by Pierre Celis. Celis had previously started Hoegaarden Brewery in Belgium, and is credited with resurrecting the Belgian Wit style in the 1960s. After that brewery burned down, he was forced to sell Hoegaarden to Interbrew, now a part of Anheuser-Busch InBev. He later immigrated to the United States and founded Celis Brewery in Texas.

In 1995, Celis was sold to Miller Brewing, but the brand flagged under their ownership. Miller later sold the brand to Michigan Brewing Company, which closed in 2012. At a bankruptcy auction, the Brand assets, including the Celis name, were sold to Craftbev International. Craftbev later sold the name back to Celis’ Daughter, Christine Celis, who reopened the Celis Brewery in Austin in 2017.
