Fat Orange Cat Brewing Company was founded in 2016 in East Hampton, Connecticut by Mike Klucznik and his wife, Sheila Mullen. Klucznik was an avid homebrewer and CPA, while his wife was a teacher of American Sign Language before the two decided to start a brewery. They named the brewery after their cat, named Brewmaster Billy, and set up shop in their barn located in their backyard. The site was open seasonally for guests to come and drink on site, complete with goats, dogs, and of course cats running around.

The brewery was on the forefront of the hazy IPA trend in craft beer, and quickly became a destination. However, in 2021 the brewery taproom closed amidst the Covid pandemic, and began contract brewing at various other breweries in the area. Currently, Fat Orange Cat is brewed through contract at Twelve Percent Brewing in nearby North Haven.
