Fiji Bitter was the first product created by Carlton Brewery Fiji Limited in Suva, Fiji in 1958. The company was created as a partnership between Australian-based Carlton and United Breweries and Carpenters Fiji Limited, a Fijian multi-industry conglomerate. The first keg went on sale in 1959, and later followed up Fiji Bitter with Fiji Light, which was later replaced with Fiji Gold.

The company expanded rapidly, and in 1972 they went public with 14% of their shares available on the South Pacific Stock Exchange. The company purchased several South Pacific brewers and distillers, and had grown dramatically through the later half of the 20th century. By 2000, it was 63% owned by Carlton and United, with 30% held by the sovereign wealth fund of Fiji known as Fijian Holdings Limited. In 2005 it merged with South Pacific Distilleries to become Fosters Group Pacific Limited, with Fijian Holdings still retaining about a 29% ownership stake.

In 2012, SABMiller purchased Fosters Group (the descendent of Carlton and United Breweries), and forced a sale of its stake in Fosters Group Pacific Limited to Coca-Cola Amatil, the local Coca Cola bottler, for 91 million Fijian dollars, giving them an ownership stake of 89.59%. The company then came to be known as Paradise Beverages Fiji Limited. In 2021, Coca-Cola Amatil merged with Coca-Cola European Partners to become Coca-Cola Europacific Partners. That company is publicly traded, with a 19.5% minority stake owned by The Coca-Cola Company. That same year, CCEP purchased another 0.55% of the Paradise Beverages Fiji shares, which pushed their ownership stake passed the crucial 90% threshhold. This allowed them to proceed with a compulsory acquisition of the remaining shares, granting them total ownership over the company.
