Grand Teton Brewing Company was founded in 1988 in Wilson, Wyoming by brothers Charlie and Ernie Otto. It was originally known as Otto Brothers’ Brewing Company, and at the time it was the first modern microbrewery in the state of Wyoming. The brewery is credited with having reintroduced the concept of the growler, a refillable container for transporting draft beer, to the nation, having brought the option to their brewery in 1989. Although brewpubs were illegal in the state at the time, the brothers began a lobbying campaign to change the law, and successfully petitioned the state legislature in 1992, when they opened their brewpub. Six years later, the brewery was moved to a larger facility in Victor, Idaho at the base of Teton Pass.

In the year 2000, the name of the brewery was changed to Grand Teton Brewing Company to reflect a more regional and recognizable brand. The brothers later sold the brewery in 2009 to husband and wife Steve and Ellen Furbacher, who continue to own the brewery. The couple has made many improvements to the brewery, including updating the bottling line and brewing equipment. Since then, beer production has grown from less than five thousands barrels to over ten thousand barrels at its peak in 2012. In 2018, their son Chris Fuhrbacher and his wife Laura moved back to Victor to take over many of the operation duties from his parents. At the same time, the brewery pulled back from many of its markets to focus on Idaho and Wyoming.
