Monnik Beer Company was founded in Louisville, Kentucky in 2015 by Brian Holton and Ian Luijk. Holton had previously started nearby Beer Engine Brewery, and met Luijk, a general contractor transplant from Holland shortly thereafter. The two became friends and quickly began discussing opening a second brewery together.
