Payette Brewing Company was founded by husband and wife Mike and Paige Francis in 2011 in Boise, Idaho. Mike was previously an engineer at Boeing in Seattle before he left the industry to pursue his growing passion for craft beer. He studied at the Siebel Institute of Brewing in Chicago, and received an Associate’s Degree in brewing there. Afterwards, he served as a brewer at Schooner Exact Brewing in Seattle, Washington before heading back to Boise to start Payette Brewery at the age of 27. His wife, Paige, acts as Marketing and Art Director for the brewery.

In 2016, the company moved to a new brewery and taproom location in the former Bronco Elite Gymnastics gym, which also housed racquetball courts and a swimming pool where the taproom now lies. Payette now distributes its beer throughout Idaho as well as Washington, Oregon, Montana, Wyoming, Utah, and Nevada. The brewery’s name is a reference to François Payette, a French Canadian fur trapper whose name is enshrined among numerous Idaho landmarks.
