Thirsty Dog Brewing Company was created in the year 1997 in Canton, Ohio, United States by Dale Magistrelli, Bob Bolan and Gary Jones. The team set up the first Thirsty Dog Brewpub that year, followed by one in Centerville in 1998 and Copley in 1999. The packaged beer was produced through a contract brewer on the East Coast.

In 2002, as the company faced financial pressures, brothers Erik and Ulö Konsen and John Najeway invested in the company, earning the rights to bottle the beer and eventually becoming the owners. They built a new brewery on the site of the former Burkhardt Brewing Co in Akron, Ohio, and began producing there. The restaurants closed in 2005, but Thirsty Dog Brewing refocused its efforts as a packaged brand, and expanded significantly until about 2016. By that time, the brewery had 25 fermenters, most with a capacity of 72 barrels. In 2021, they faced a significant crisis when a mechanical error resulted in a production stoppage in the height of the holiday season, but they were able to resolve it by borrowing a motor from another nearby brewer. Najeway still acts as managing partner at the breweyr.
