Westbound & Down Brewery was founded in Idaho Springs, Colorado in 2015 by Geoff McFarlane, Dan Brown and Jed MacArthur. The trio quickly met brewer Jake Gardner, who was previously the Head Brewer at Hogshead Brewery, to be brought on as brewmaster. They established a taproom in the former location of Buffalo Restaurant & Bar with its former owners, to create a joint location there. The company later built a second location in Lafayette in 2021, followed by a third in Denver.

In 2023, the company purchased two breweries from Legacy Brewers: Aspen Brewing in Aspen, Colorado, and Capitol Creek Brewing in Basalt, Colorado. The two were purchased by Legacy in 2019 and 2021, respectively, as part of a drive to create a new brewing group, with Ninkasi Brewing as the flagship. Ninkasi, however, eventually pulled out of the group, leading Legacy to cut down its assets.
