Wild Barrel Brewing was founded in 2017 in San Marcos, California by Bill Sysak and Chris White. The two friends brought on brewer Bill Sobieski as a partner in the project, who Sysak had met while the two both worked at Stone Brewing. White was the owner of a local cigar business, and brought the financial backing and real estate connections to see the process through. Later that year, Preston Weesner was brought on as a fourth partner to manage the company’s barrel program.

The brewery originally planned on taking over the space occupied by Stumblefoot Brewery, but then found a location in San Marcos that was visible from the freeway, and had batting cages and axe throwing next door that would provide a good flow of customers. In 2019, the company added a second location in Temecula, California, about 30 miles away.
