Oyster City Brewing was founded in Apalachicola, Florida in 2014 by Cassie Gary, Susan Gary, Rex Humphries, and Bo Walker. Cassie, Susan, and Rex were the owners of the nearby Owl Café and Taproom, and conceived of the idea of starting a brewery after hearing guests ask for a local beer. In 2019, a majority stake in the business was purchased by Wiregrass partners, an Alabama based private equity firm. The firm then set up Made By The Water to manage their brewing portfolio, and later added Catawba, Palmetto, and Faubourg beers to their roster.
