Brewery X was founded in 2019 in Anaheim, California by Paige, Carley, and Chris Pennington, along with Clayton Wellbank. Steve Robinson and his wife Janet Crown, heir to the Crown Family fortune of over $10 billion, also invested heavily in the founding of the brewery. Sisters Paige and Carley both received their Masters of Science in Entrepreneurship and Innovation at the University of Southern California, and as part of their thesis developed the business plan for Brewery X. They teamed up with Wellbank, who had received his MBA at USC three years prior, and their father Chris, who owns an architectural firm in Rancho Cucamonga. The firm hired Trevor Walls, former brewer for Pizza Port San Clemente, as their head brewer.

During the height of the George Floyd protests of 2020, the received criticism for creating merchandise and social posts featuring the “Blue Lives Matter” flag. Robinson is a reserve police officer for the Los Angeles and Hawthorne Police Departments.

In 2022, Brewery X won the bid to purchase Modern Times Brewery at auction during thier bankruptcy hearings, in part due to their aggressive closing timelines. The second highest bidder, MTD Asset Acquisition LLC, objected, as their bid was higher but with a longer closing time. The judge overruled the objection and allowed the sale to Brewery X to proceed. However, the company failed to meet those deadlines, and instead the brewery was purchased by Maui Brewing.
