Squatter’s Beer was started in 1989 in Salt Lake City. The brand was initially owned by Peter Cole and Jeff Polychronis, who started it as a brewpub. The two were real estate agents who started their own commercial real estate brokerage together in 1984. A change to tax laws weakened the real estate market, encouraging them to leave the industry. Around the same time, the two were traveling for work and noticing the burgeoning brewpub movement. The two wrote a business plan based off of those travels, and opened the pub shortly thereafter.

In 2000, Squatter’s merged with Wasatch Beer to form the Utah Brewers Cooperative. Greg Schirf, who owned Wasatch, was a longtime friend and friendly rival in the Utah beer scene, which set the collaboration up for success. In 2012, the cooperative was sold to Fireman Capital Partners, a venture capital firm created by Paul Fireman, the former CEO of Reebok. The firm later started the CANarchy Craft Brewery Collective with Squatter’s and Wasatch in 2015. Other craft breweries soon joined the organization, and CANarchy was sold to Monster Beverages in 2022. Since Monster was not interested in running the brewpubs, as part of the agreement the Squatter’s and Wasatch brewpubs were sold back to the original owners. They put together a group of investors to form PRC Restaurant company to purchase the restaurants.
