Faubourg Brewing Company was founded in October of 1907 in New Orleans, Louisiana by Valentine Merz. It was originally known as Dixie Brewing, and then during prohibition as Dixie Beverage Company and then Merz Products Co., Inc. When prohibition ended, Dixie reverted to its original name. The brewery was built in Mid-City New Orleans on Tulane Ave. The company was sold to Coy International in 1983, who resold it to Joseph and Kendra Elliott Bruno in 1985. In 1989 the company went bankrupt, reorganizing in 1992. Damaged by Hurricane Katrina, the company moved production out of state, and was brewed by contract through the Joseph Huber Brewing Company in Wisconsin.

In 2017, Tom Benson (owner of the New Orleans Saints and New Orleans Pelicans) purchased a majority of the brand from the Brunos with the goal of bringing production back to New Orleans. Although he died the following year, his wife Gayle Benson took control, and the brewery was built in Eastern New Orleans in 2019, finally returning production back to the Crescent City. Due to the controversial past of the name “Dixie,” and in response to the racial reckoning that resulted after the murder of George Floyd, in 2020 the company changed its named to Faubourg (meaning “neighborhood” in french). In 2022, Faubourg merged with brewing portfolio company Made By The Water, with Gayle Benson taking a 50% ownership interest in the organization. The brewing consortium, started by Wiregrass Equity Partners, also owns several other breweries throughout the Southeast, including Oyster City Brewery, Catawba Brewery, and Palmetto Brewery.
